new year peas
this is an easy one: start kimberly's no-knead bread, and soak 32 oz dry black eyes in the crock pot (not on) for 6 hours in water a couple of inches over the level of the peas; at the same time, render the christmas turkey in a stock pot with a quartered onion (with skin) bay leaves, and whatever old veggies are left in the fridge, chiefly celery here. after 6 hours, drain the peas and put them back in the crockpot along with the holy trinity (an onion, a stalk of celery, and a green bell pepper, chopped) and transfer the potliquor cup by cup until it is just visible between the peas (season each cup of broth with tony's:) if meat is desired, push some smoked neck bones or such down into the mixture (the pot will be heaped FULL!) then cover and cook on low setting for 12 hours. yum! serve with rice and fresh bread, freeze half of it for later, freeze remaining potliquor, if any, and enjoy the year!
you can cut the recipe in half by using a 16 oz package of peas and have more liquor left over, but why?
